<b><span style="font-size: large;">1) 把肉洗干净沥干水份,用餐巾纸抹干水份,用五香粉跟盐涂在肉面上,皮跟周边不要涂到,可以用少许盐抹下。</span></b><br />

<b><span style="font-size: large;">2) 然后用锡纸把肉全部包起来,皮不包到,皮需要露出来,腌好了放冰箱下层冬眠几天,炸之前拿出来放温室退冷。</span></b><br />

<b><span style="font-size: large;">3) 皮要涂白醋(我是要炸当天才抹白醋)均匀的把皮全部抹白醋,然后放着等到皮的白醋干了才放去油炸</span></b><br />

<b><span style="font-size: large;">4) 炸的时候锅放一双铁/竹筷子在油锅中(这样是防止皮贴在锅底炸不到),皮先下,怕弹可以用锅盖盖一下,等没什么弹才打开,中火慢炸(要看你的肉多厚),要翻面炸,</span></b><b><span style="font-size: large;">筷子插得进肉就是熟了,放凉砍件就可以了。</span></b><br />

<span style="font-size: large;">1) 放冰箱的下格,不是雪藏那边。</span><br />

<span style="font-size: large;">3) 包了锡纸要装在盒子里放冰箱,不要盖的。</span><br />

<span style="font-size: large;">4) 调味放多一点,烧肉要皮脆肉咸</span><span style="font-size: large;">才好吃。</span><br />

<span style="font-size: large;">5) 我是中火慢炸,时间不定,具体要看你买的肉厚薄。</span><br />

燕菜粉一包25g<br />

即溶奶精(coffee mate)<br />
色素 随意<br />
<br />
做法:<br />
<ol>
<li>把燕菜粉与2000ml的冷水搅溶,把捆绑后的pandan叶放进去一起煮,</li>
<li>移至火炉大火煮滚至多多泡泡,不停的搅拌,转最小火,加糖,搅拌均匀,</li>
<li>要煮它大概半小时(煮的久才不会这么容易出水),间中要不时搅拌,不然会粘底,</li>
<li>拿个小容器拿装点煮好的jelly水,加入即溶奶精(大概100ml的jelly水,放一汤匙的奶精),搅拌均匀,加入喜爱的颜色,</li>
<li>把竹签放在lollipop的模型中倒入一半的jelly,等1,2分钟,稍干时,用指腹去碰触,感觉有点硬了就加入第二层,第二层可以放其它颜色,</li>
<li>完成后待冷,放入冰箱,最好是隔夜才脱模,</li>
<li>如果要弄多,却只有一个模型,就把弄好的jelly放去打冰那,让它快速冷,结实,切记不能太久,以免结冰了,隔天就会出水的厉害。</li>

<li>打一颗鸡蛋,将猪排依序沾面粉、蛋液面包粉过三关。</li>

<li>过好冷水的三层肉捞起用厨房巾擦干水分,用叉在猪皮表面上插孔,插得越密表皮越脆,(或者用另一种方法,就是在表皮斜切,密度要密点,可以参考下面的图)</li>
<li>先把盐涂抹在皮上,再将五花肉翻转,在瘦肉的那切几刀(一边入味均匀),然后再将混合的腌料涂抹在猪肉上(皮不能涂),放入冰箱腌制隔夜。</li>
